Pearson Farm and 'Market Peaches'

Pearson Farm is located in Fort Valley, GA, 100 miles south of Atlanta in Peach County and has been growing peaches since the 1890's.  The farm follows sustainable farming practices to keep pesticide use to a minimum and is also preserving portions of the farm to balance the natural state of the land.  Due to the warmer temperatures and abundance of pests in central Georgia, combined with decaying fruit, pest control becomes a necessary component of producing edible peaches.  The farm inspects areas of the farm for pests to determine if a section requires spraying (they "scout" the fields weekly).  Scouting is expensive but the cost is outweighed by less pesticide application.  Additionally, ground cover throughout the year lowers the risk of pests.  Pearson Farm welcomes natural occurring pests that feed on the bad bugs.  In the winter, trimmings from the peach trees are left on the ground to become compost, which helps to grow the trees in a more natural state. 

The peaches sold at the farmers markets are "market peaches," which are not coated in wax for preservation since they are not transported long distances then shelved. 
A simple water rinse and careful handling results in a more natural, tastier peach.  The peaches are not cooled using the standard hydrochlorinated method.  They are instead air cooled for four hours, which does not affect flavor as with immediate chilling.  You can taste the difference, y'all.  

Freestone peaches are available late May until the end of the season.  Clingstone class peaches are available in May only (they are available early in the season).  Clings are the best for pickling because they are dense and do not have air pockets.  There are several varieties of peaches throughout the growing season, which is mid-May to mid-August, or as the farmers say, "from Mothers Day to the first day of school."  As the season progresses, so does the sweetness of the peach.  More common varieties include Ruby Prince and the Gala.  The peak of the season is mid-July to August.

If you are buying 'organic' peaches, they have more than likely traveled all the way from California and you are contributing to cross country transportation!  North American produce typically travels a minimum of 1,500 miles.  Pearson Farm is ~100 miles from Atlanta and are transported directly to markets without storage - reduce your "food print" and buy regional!  Also, buying GA peaches supports the local economy and that makes us all feel peachy!

Pearson farm sweet peaches come straight to the markets from Peach County.  Pearson Farm hand picks each one from the tree, choosing only the largest and prettiest for local markets.  Each one is like a southern belle, and we care for them very gently. 

All peaches, when picked, are "ripe" - they will be firm for a few days and will soften in about three or four days time.  If you purchase firm peaches, leave them on the counter and they will soften in 2-4 days.  Some people like them falling apart soft, others like them firm and crunchy...but most people like them right in the middle.

Tree ripened peaches should be left on the counter top at room temperature for 1-2 days to soften.  You can then place in the refrigerator when peaches have reached the desired level of softness (but not recommended).  Remember to not stack or mishandle softened peaches!  Also, don't forget to stock up and freeze peaches for out-of-season use!

Grilled Peaches n' Honey
  • Fresh Georgia Peaches
  • Extra Virgin Olive Oil
  • Goat Cheese (local of course)
  • Tupelo Honey (local!)
Slice peaches in half and remove pit.  Brush peach halves with olive oil.  Place cut side down on grill (medium heat) for about 2 minutes.  Flip peaches over and cook for 2 more minutes.  Remove from grill add cheese crumbles to pit area.  Drizzle with local honey and enjoy.

Peach Smoothie
  • Fresh Georgia Peaches
  • Plain Yogurt
  • Milk
  • Vanilla Ice Cream
Place peach slices, a small amount of milk and a few scoops of yogurt in a blender.  Blend until peach and yogurt then add vanilla ice cream for additional blending in order to keep a nice milk shake consistency.  Also try blending with a lime popsicle for summer tastiness.
